Lent...

Lent is here again...What to give up? I've never practiced Lent, but I was asked today what I was going to give up. I'd love to give up sweets they are my weakness to the fullest! I cannot go to bed most nights without a dessert.
Then again during the day I eat chips and salsa for a snack, totally addicted to Tostitos chips!
Things I should consider:

Wine

Pizza

yet again I don't want to be miserable :) What is everyone else giving up?? I'd love your comments!

Delicious Pork tenderloin

I always have leftovers and I hate eating leftovers! Until now...I enjoy pork tenderloin but not plain. I get a hoison sauce and marinade the pork or use a peanut butter sauce.
Below is some pictures of the peanut butter sauce, we cooked the tenderloin topped it off with peanuts and green onions. The boys even ate them!




Now that you enjoyed the tenderloin and have leftovers, we make mooshoo wraps! They are better than chinese take out! We cut tenderloin into strips, saute cabbage, carrotts and green onion. Once everything is to your liking put into flour tortillas. YUMMY! If you need the recipes just ask!

Home for sale in Arizona

My parents are wanting to move back to Seattle so there house is for sale in Goodyear,AZ. This is a great 3 Bedroom, office, 2 1/2 bath complete with a fantastic backyard. Pool, build in grill area. Covered patio, fully landscaped by my dad.

Decadent Dessert

This decadent dessert is Peppermint Fudge Cookie Sandwiches. These cookies can either be a great Christmas dessert or for anyone that loves peppermint! It was a bit difficult to make, of course the boys were helping me too so it was hectic in the kitchen. Creamy Peppermint patties and warm brownie cookies create an irresistible sweet treat.






3/4 cup Semi-sweet chocolate morsels 1/4 cup butter
1/2 cup sugar 1 egg
3/4 cup all-purpose flour
2 Candy Canes or 8-10 Peppermint hard candies crushed
1/4 c. white or semi-sweet chocolate morsels
10-12 mini foil-wrapped Peppermint patties, unwrapped

1. Preheat oven to 375. Line Large sheet pan with a 10in. sheet of parchment paper. Combine chocolate morsels and butter in Classic Batter Bowl. Microwave 40-60 sec. or until smooth, stirring after each 20 second interval. Add sugar adn egg to batter bowl; mix until well blended. Add flour;mix just until flo9ur is incorporated. using small scoop, drop 20 level scoops of batter, 1in apart, onto pan. Bake 9-11 min. or until edges are set.

2. Meanwhile, place candy canes into resealable plastic bag; crush using flat side of meat tenderizer and set aside. Place white chocolate morsels into small micro cooker. Microwave uncovered on high 30 seconds, or until melted, stirring once.

3. Remove sheet pan from oven to Stackable cooling rack. Immediately turn over half of the cookies; top with peppermint patties and remaining cookies to form 10 sandwiches. Drizzle chocolate over cookies and pan with additional parchment and scoop with remaining batter. Bake 9-10 minutes. Assemble as directed above.
